Honey Yams

Serves 6 to 8 (double or triple as needed)

Preheat oven to 350 degrees
1. Wash, pressure cook (see notes below) or bake, peel, and place in mixing bowl:
6 medium yams

2. Add and mash all together:
6 TB butter
6 TB honey
1/4 cup hot milk
2 tsp. grated lemon rind (I use orange)
1 tsp. cinnamon
1 tsp. salt

3. Place in casserole dish and top with:
chopped pecans

4. Bake at 350 degrees for 20 to 30 minutes.
